RECIPE FOR KENYAN GREENS WITH FRESH FRUIT GARNISH

Nutrition: This dish is rich in CARBS (fruit), PROTEIN (peanuts), GOOD FAT (olive oil, butter and coconut milk), VITAMINS AND MINERALS (fruit, greens, tomatoes, onions and peppers)

Prep Time: 20 minutes; Cook Time: 20 minutes; Makes: 15 small servings

Special Equipment: One medium saucepan and tongs

Ingredients:
1 Jalapeno pepper or Hot Sauce to taste
2 teaspoons Salt
2 teaspoons Pepper, freshly ground
3 tablespoons Olive OIl
1 pound fresh Greens (kale, collards, mustard, chard, etc.)
1 pound fresh Spinach
3 large Tomatoes
1 large Yellow Onion
2 cups Canned Coconut Milk
4 teaspoons Dry Roasted Peanuts for garnish (optional)
10 Strawberries
1 Melon (in season) or Mango
1 Banana

Directions:
1. Add water to pot with chili pepper, salt, pepper and 1 tablespoon olive oil.
2. Heat over medium flame, and add chopped greens and spinach when the mixture comes to a boil.
3. Cook the greens for 3 minutes.
4. Drain and cool.
5. While the greens are cooking, chop the tomatoes and onion.
6. Heat remaining olive oil in a skillet over medium heat.
7. Add the cooked greens and spinach, and the chopped tomatoes, onions, and coconut milk.
8. Cook 3-5 minutes, until flavors melded.
9. Season to taste.
10. Serve with a sprinkle of chopped peanuts on each serving.
11. Wash, cut and arrange the fruit decoratively around the serving dish.
